Lavender, sweet lavender! Esteemed since ancient times, lavender is one of the most valuable herbs - both economically and esthetically. For gardeners in the temperate climes (Zone 6 and lower), the L. angustifolia varieties are the most likely to survive our winters in Zones 5-7. But even they need careful mulching in the Fall!
